I've only tried to make caramel apples on little apple pieces that have been cut out of the apples with melon balls and then dipped in the caramel. But, from this experience, I find that apples probably need their skins to keep the caramel stuck on the apple. The caramel always dripped off our little "apples" and ended up a big puddle of goo. Your apples look like the caramel stuck!
